Aloo Gosht

  1. Take two pounds of mutton and wash it.
  2. Take one big onion and cut it into pieces.
  3. Take one big tomato and make puree of it.
  4. Take a pressure cooker pot and put three big spoonfuls of oil.
  5. Fry the onion until it becomes light brown. Lower the heat to three quarters.
  6. Tilt the pot to drain the oil and remove the onion, make puree of the onion, add some pre-fried onion to add and few sprinkles of cinnamon powder.
  7. Prepare the Masala:
    1. Two teaspoons of coriander
    2. One teaspoon of salt
    3. Half teaspoon of turmeric
    4. Half teaspoon of red chili powder
    5. One teaspoon of Garam Masala
  8. Put the meat pieces in the pot.
  9. Add one tea spoonful of garlic to it.
  10. Fry the meat for five minutes.
  11. When the meat pieces change color, add the Masala.
  12. Add table spoonful of yogurt.
  13. Let it cook for five minutes or more until all the yogurt is gone.
  14. Add the tomato puree.
  15. Stir and stir again. Bhoono thoroughly until oil is clearly visible. DO NOT do the next step until you make sure that oil is visible. Check and double check.Mix thoroughly.
  16. Add two cups of water.
  17. Put the lid and close the pressure cooker.
  18. Wait for the pressure to start shaking and throwing out steam.
  19. Take two regular sized potatoes and peal them and cut them in squares.
  20. Cook for fifteen to twenty minutes.
  21. Let the pressure cool down or run cold water over it after a while and open the pressure cooker carefully.
  22. Add the onion puree.
  23. Add the potato pieces.
  24. Close the pressure cooker again.
  25. When the pressure builds up, Wait for one minute before turning off the heat. If you turn off the heat earlier, the potatoes will not be cooked fully.
