Vegetarian Pulao
Plain rice can be eaten with almost any side dish. It is highly recommended to use Basmati rice. It does not matter which brand you choose as long as it is Basmati.
- Take three cups or one cup of rice, wash it and drain all the water.
- Add five cups of water to three cups of rice or two cups of water to one cup of rice.
- Add three teaspoons of salt for three cups of rice or one teaspoon in one cup of rice.
- Wait for half an hour.
- Use a big pot and add six spoonfuls of cooking oil for three cups or two spoonfuls for one cup.
- Add one sliced onion to three cups or half sliced onion to the cooking oil.
- Add cumin (zeera) as per your taste.
- Warm up the cooking oil at mark 8.
- Add two or one chicken stock.
- When the onions become slightly brown, add two cups or one cup of your favorites vegetables or green peas.
- Lower the heat to mark 7.
- Cook for ten minutes while stirring regularly.
- Add the rice with the water to the peas.
- Mix thoroughly.
- Cover the pot and keep checking that the steam and water is not over flowing.
- Lower the heat to mark 6.
- When all water is almost gone, lower the heat all the way below mark 1.
- Mix thoroughly to mix the peas evenly with the rice.
- Wait for ten minutes.
- Serve with yogurt, raita, pickles, salad etc.
