Mutabbel
Ingredients
- One big Egg Plant
- Yoghort
- Tahina
- Garlic
- Salt
- Olive Oil
- Mint leaves
- Lemon juice
Muttabel .
- Take one big eggplant.
- Wash the eggplant.
- Poke the eggplant with knife into ten places so that it won’t burst.
- Microwave the eggplant for ten minutes. Turn the eggplant over and microwave it for five more minutes.
- Let it cool.
- Peal the skin when the eggplant is cool.
- Put it in deep container to avoid spilling
- Cut it into small pieces and mash it with a fork.
- Beat it using the manual electric beater.
- Add:
- - Lemon juice, one level table spoon.
- - Yoghort, half a container.
- - Garlic, one level tea spoon.
- - Tahina, mix it thoroughly and add four level table spoons. The first spoonful will be sticky.
- - Add fourth tea spoon salt.
- - Add one table spoon of olive Oil.
- Beat the whole thing again thoroughly.
- Serve cold in a bowl is olive oil and some mint leaves.
Mutabbel is one of favorite vegetarian Lebanese dishes. It was one of the first dishes that I tried when I went to Lebanon. It is also one of the appetizers usually recommended to first time foreign guests to Middle Eastern cuisine.
